PERCY'S ORGANIC PORK

This splendid pork is from our own home reared pig herd of rare breed, organic, pedigree Large Black's. Allowed to develop at their own pace, stress-free on fully organic land, they live an idyllic existence beneath their own tree canopy, foraging from a woodland floor dense in acorns, brambles, roots and natural goodness to produce superbly flavoured succulent meat.

Delicious cooked with veg such as celery, celeriac, onions, parsnips & carrots with juniper, peppercorns, thyme, sage or rosemary. Simmer for 1 - 2 hours, cool, remove skin, baste with honey & pepper & roast for 30 minutes in a hot oven to finish.

This is cured neck fillet, cut from the shoulder. Nicely marbled for incredible flavour. Roast or boil, serve hot, or cold as ham. Spike with cloves and/or glaze with honey or maple syrup. Can be cut into steaks to grill or fry for individual portions.
